The Italian Mojito

It's impossible to walk past a basil plant without being captivated by its powerful scent which immediately transports us to a small restaurant terrace in Italy. We had to use its magic leaves in a macaron. Why not giving a little Italian twist to our mojito macaron? Challenge accepted ! A creamy white chocolate ganache, a generous spoon of lime juice, some patiently peeled fresh basil, and voilà: the Lime & Basil Macaron was born!

Ingredients :

Shell: Sugar, Ground almond, Liquid egg white, Corn starch, Water, Food coloring preparation (water, high fructose corn syrup, glycerin, sunset yellow FCF, tartrazine, sugar, modified corn starch, brilliant blue FCF, citric acid, sodium benzoate and potassium sorbate, carrageenan gum, xanthan gum), Dry albumen, Charcoal. Filling: White chocolate (sugar, cocoa butter, whole milk powder, soy lecithin, natural vanilla flavour), Lime juice, Fresh basil, Starch preparation (modified corn starch, vanillin, beta carotene, riboflavin), Beta-carotene, Spirulina.
