''MORESH'' olive oil

A meeting of Morocco and Québec.

Created in collaboration with Moresh, this macaron showcases Moroccan olive oil with a delicate yet distinctive character. A true technical challenge for our team: incorporating olive oil into the heart of a macaron while preserving its signature texture and allowing its full aromatic profile to shine.

The result is a flavourful, indulgent and truly experiential macaron, where olive oil becomes the signature of every bite.

Ingredients:

Shell: Sugar, Ground almonds, Liquid egg whites, Corn starch, Water, Beta carotene, Citric acid, Albumen, Citrus fiber, Xanthan gum. Filling: White chocolate (sugar, cocoa butter, whole milk powder, soy lecithin, natural vanilla flavour), Cream 35% M.F. (cream, carrageenan), Olive oil, Sorbitol, Glucose, Salt. Decoration: Compound white chocolate (sugar, palm kernel oil, whey powder, soy lecithin, sorbitan tristearate, natural flavour), Coconut oil, Colour (brilliant blue FCF).
